Saffron (Kesar) is derived from the flower of Crocus Sativus, also known as "Saffron Crocus". It has three gentle crimson stigmas in the center. In fact, it is one of the most expensive spices in the world. It takes more than 150 Crocus flowers to make up just one gram of Saffron. Also known as Kesar in Hindi, Kumkuma pubba in Telugu, Kungumapoo in Tamil, Zafran in Bengali. It is an extremely valuable spice, especially for its distinct flavor, health, and medicinal properties. Kashmir (India), Iran, Spain, Greece, Morocco, and Italy are major producers of Saffron. Iran is the largest producer of Kesar. It comprises more than 90% of the world's total production.
