They mean the same thing. “Gilding” is the older, traditional word. “Leafing” is the more common word used today. Both refer to applying thin metal leaf sheets onto a surface.

Q: What’s the difference between Gold Leafing and Gold Paint?

Very big difference:

Q: Which shades and finishes are available in metal leafing?

Traditionally, people mainly used gold leafing and silver leafing.
